   So sometimes I just want to eat a muffin.  A nice warm buttery muffin.  But sometimes a muffin is really  just a cupcake disguised as a muffin, know what I mean?  I  don't want to feel guilty for eating a piece of  "cake" for breakfast,  don't get me wrong, I love me a piece of cake!  I want to know that what I feed my family is going to be good for them, at least 93% of the time, all things in moderation right? I reworked my favorite cupcake muffin recipe, to make it healthier.  I share it with you today.



Carmen's Strawberry Orange Yogurt Muffins:
In a large bowl combine:
2 cups of whole wheat flour
1 TBSP baking powder
1/2 tsp salt
rind of 1/2 an orange

In a second bowl combine:

1 egg
1/2 c melted honey
1 cup skim milk
1/2 cup orange yogurt

whisk together until blended and add to dry ingredients.  Do not over mix, just stir until everything is combined, it should be a little lumpy.

Fold in 1 cup of diced strawberries

fill greased muffin pans 2/3 full and bake at 350 for 20-25minutes.  until they start to brown around the edges.
Makes 12 muffins.
